Designed for use with our 11" roasters. Place it over your dough and the roaster becomes an oven inside the oven. Great for making rustic boules at home.

Each lid is spun from a single disc of 14-gauge carbon steel.  Domed ten inches across and six inches tall, room enough for a boule to spring without catching the top. We finish it with a cast stainless knob, stamped with our mark.

What it does is simple. As the dough bakes it gives off steam, and the cloche keeps that steam wrapped around the loaf.  The crust stays soft long enough for the bread to climb, then you lift the lid for the last half of the bake and it sets a dark, blistered, and crackling crust. Carbon steel takes heat fast and holds it.

Built to pair with any Blanc Creatives 11″ roaster. 

Lid can be purchased a la carte or as a set with your choice of a steel or bronze handled roaster.

Each cloche/roaster combo will cook 1 loaf (any recipe up to 500g flour)

Protecting Your Heirloom

  • Preheat gradually to avoid warping
  • Avoid prolonged cooking with acidic or sugary foods (especially early on)
  • Stick to neutral, oil-based cooking at first
  • Use oils with high smoke points (grapeseed, avocado, etc.)
  • Choose wood, silicone, or nylon utensils

After Each Use

  • Wipe clean with a paper towel
  • Rinse or lightly wash with mild soap if needed
  • Dry thoroughly
  • Set over low heat to remove residual moisture
  • Apply a light coat of oil to protect the surface
  • Use coarse salt to scrub off stuck-on bits

Avoid

  • Frequent dish soap use
  • Metal utensils
  • Storing your pan wet
  • Soaking in water
  • Dishwashers
