Knives that don’t meet our criteria for “Firsts” are offered at a discount on our Garage Sale / Seconds page. These “Seconds” may include minor cosmetic imperfections, such as pits, extra hammer marks, or uneven finishes—most of which soften with use and do not affect function.

Protecting Your Heirloom
Preheat gradually to avoid warping
Avoid prolonged cooking with acidic or sugary foods (especially early on)
Stick to neutral, oil-based cooking at first
Use oils with high smoke points (grapeseed, avocado, etc.)

This is, by far, the best skillet I have ever owned or used. I’ve cooked on 100 year old seasoned cast iron (which was my preferred and go to skillet), stainless steel, and others and nothing, I mean nothing, compares to this skillet. It’s more nonstick than chemical coated pans and there’s zero chemicals. It heats amazingly even with no hot spots or cold areas. Clean up is super easy.
And it’s freaking gorgeous. The only negative I could possibly imagine is the weight. It’s a heavy skillet, but that’s the trade off for something that heats evenly and consistently and is made of carbon steel.
It’s pricey, but you’ll never need to buy another pan as long as you live.
Feels great in your hands, also feels like it heats up faster than my cast iron and seems like it has a different transfer of heat. I’m cooking with it about 3 nights a week since it arrived trying to get comfortable with how to use it. When I say it heats up faster let me give a good reference: My first steaks, thick cut filets started on stove and finished in oven, came out of the pan with hard crusts and cool red centers. This was perfection for me. Timing on the pan was shortened as the steaks clearly were cooking fast. Cod baked in the pan was centerfold worthy. The long curved handle makes stove to oven transfers easy…….I just have to resist the urge to grab the handle without towel 🤷🏻♂️.
This is a legacy pan…it is a piece of artistic and artisan beauty and function…I thought cooking with cast iron elevated cooking…I was unprepared for the next dimension of food that is created through the use of this pan!
This pan is a work of art! It is so well balanced and the shape and size is perfect. I have several other mass produced carbon steel pans from the US and Europe, and this pan outshines them by far. I am still working through seasoning it and building up the patina, but I know this pan is going to be a work horse in my kitchen. Well worth the price and supporting a small business.
Got this as a gift for friends who really wanted it. I know they will create many wonderfully delicious meals together for friends, family, and others lucky enough to share a meal with them.😊

It saddens me to see true craftsmanship undervalued and slowly disappearing from the American culture unlike many European countries where continues to be revered.
I received the Pro Skillet as a gift during the early months of the pandemic when I was cooking A LOT. After seasoning the pan, I was blown away by its nonstick qualities. The skillet is the nicest piece of cookware I have ever used. It gets better with every use, and is super easy to maintain. I love it so much, I just purchased the Pro Saucier.

This is my first carbon steel pan and I’m shocked by how evenly it heats and how nonstick it is. I love the hammered handle and the overall look of the pan.
Love it! Full disclosure - I'm a DeBuyer Mineral-B fanboy. But the 11" skillet from Corry & Crew is a whole universe above in quality, construction, and utility. Dead-even heat and at the same time super-responsive (usually these two qualities are mutually exclusive outside of high-end copper). Equally amazing, Day 1 and I was turning out perfect french omelets for dinner after just one round of seasoning and cooking off some pork chops. That's it, and this photo is just after dinner and a quick wipedown. Amazing.
