Each knife is forged from high-carbon steel and fitted with regionally sourced, stabilized hardwood. We heat-treat the steel for lasting edge retention, and condition the wood to resist moisture and warping over time.

Every piece is inspected multiple times throughout the making process by our skilled craftspeople. Natural variations, such as surface blemishes, subtle discoloration, or light tooling marks, are a normal part of handmade work and meet our rigorous quality standards. These do not affect performance or longevity.

Knives that don’t meet our criteria for “Firsts” are offered at a discount on our Garage Sale / Seconds page. These “Seconds” may include minor cosmetic imperfections, such as pits, extra hammer marks, or uneven finishes—most of which soften with use and do not affect function.

Our knives are made from high carbon steel, which can rust if left wet or exposed to moisture for prolonged periods. With proper care, they’ll serve for generations.

  • Hand-wash only. Never use a dishwasher.
  • Dry thoroughly. Don’t leave knives in the sink or drying rack—wipe dry immediately.
  • Avoid soaking. Prolonged water exposure can damage both blade and handle.
  • Apply oil regularly. After cleaning, apply a thin coat of food-safe oil (mineral oil or similar) to protect the blade. Use a clean cloth to apply and wipe off any excess.
  • Expect a patina. Acidic ingredients like onions, tomatoes, and citrus may darken the blade over time. This natural patina is normal and harmless when the blade is properly cleaned.
